Crusted Pork Roast

Ingredients
- 1 kg of pork loin
- 500 g of puff pastry
- 2 tablespoons of mustard
- Aromatic herbs to taste (rosemary, sage, thyme)
- 2 garlic cloves
- Salt and pepper to taste
- 1 egg (for brushing)
- 2 tablespoons of extra virgin olive oil
Preparation
- Preheat the oven to 200 °C.
- Prepare the meat: clean the loin of any excess fat and tie it with kitchen twine to maintain its shape during cooking.
- In a large pan, heat the extra virgin olive oil and sear the loin on all sides to seal the juices inside. Sprinkle with salt and pepper.
- Deglaze with a bit of white wine or broth if you prefer, let it evaporate, then remove the loin from the heat and let it cool down slightly.
- Roll out the puff pastry on a floured surface and spread the mustard evenly on top.
- Place the meat on the puff pastry and add the chopped aromatic herbs and garlic cloves (you can insert them whole or crushed depending on your taste).
- Wrap the meat with the puff pastry, sealing the edges well and removing excess air.
- In a bowl beat the egg and brush it on the surface of the puff pastry to obtain, after cooking, a golden and appetizing color.
- Place the roast on a baking tray lined with parchment paper and bake for about 35-45 minutes or until the crust is golden and crisp.
- Remove the roast from the oven and let it rest for 10 minutes before slicing.
