Ingredients

  • 1 roll of puff pastry
  • 200 g of cherry or date tomatoes
  • 1 egg yolk
  • Fresh basil
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 200°C (180°C if fan-assisted).
  2. Roll out the puff pastry and cut it into squares of about 5 cm on each side.
  3. Wash the tomatoes, dry them, and cut them in half.
  4. Place half a tomato in the center of each square of puff pastry.
  5. In a small bowl, beat the egg yolk and brush it on the edges of the puff pastry squares.
  6. Sprinkle a pinch of salt and pepper on the tomatoes and add a fresh basil leaf to each one.
  7. Dust with a little grated cheese and, if you want an extra aromatic touch, add a pinch of dried oregano.
  8. Fold the pastry, helping yourself with the tips of your fingers to close the edges and create a sort of small bundle around the tomato.
  9. Arrange the bundles on a baking tray lined with parchment paper and bake for about 15-20 minutes or until the puff pastry is golden and crisp.
  10. Let them cool down slightly and garnish with a drop of balsamic vinegar cream, if desired.
