Asparagus in Puff Pastry

Asparagus in puff pastry is a tasty and simple dish to prepare, perfect as an appetizer or as a light second course.

Ingredients

  • 1 bunch of fresh asparagus (about 250-300 g)
  • 1 rectangular roll of puff pastry
  • 100 g of soft cheese (e.g., goat cheese or robola)
  • Salt and pepper to taste
  • 1 egg (for brushing)
  • Sesame or poppy seeds (optional)

Preparation

  1. Preheat the oven to 200 °C.
  2. Clean the asparagus by removing the harder end of the stem. You can simply snap it off by gently bending the asparagus towards the bottom of the stem.
  3. Boil the asparagus in salted water for 3-4 minutes, until they are slightly softened but still crunchy. Drain them and run cold water over them to stop the cooking and maintain a bright green color.
  4. Roll out the puff pastry and cut it into strips wide enough to wrap the asparagus.
  5. Spread a thin strip of soft cheese in the middle of each strip of puff pastry.
  6. Place an asparagus spear in the center of the puff pastry strip and roll the pastry around it, making sure to cover it completely. Repeat with all the asparagus.
  7. Beat the egg and brush the wrapped puff pastry. This will help give a golden and crispy color to the surface.
  8. If desired, sprinkle the rolls with sesame or poppy seeds to add a crunchy and decorative note.
  9. Arrange the asparagus in puff pastry on a baking sheet lined with parchment paper. Make sure there is space between each one to prevent sticking during baking.
  10. Bake for approximately 15-20 minutes or until the puff pastry is golden and crispy.
  11. Remove from the oven and serve the asparagus in puff pastry warm or at room temperature.

This dish can be customized in many ways: some prefer to use cured ham or speck to wrap the asparagus before the pastry, to add flavor and a different texture.
