Crushed Potatoes

Crushed potatoes, or “crushed potatoes” in English, are a very simple and tasty side dish. Here is the recipe to prepare them:

Ingredients

  • 4 large potatoes (yellow-fleshed are better)
  • 2 tablespoons of extra virgin olive oil
  • 2 cloves of garlic
  • Salt and pepper to taste
  • Rosemary or other aromatic herbs as desired
  • (Optional) Parmesan or other grated cheese for gratin

Preparation

  1. Thoroughly wash the potatoes and boil them in salted water until they are soft but still firm (the time depends on the size of the potatoes, but it is around 20-30 minutes).
  2. Once cooked, drain them and let them cool for a few minutes.
  3. Arrange the potatoes on a baking tray lined with parchment paper.
  4. With the bottom of a glass or a fork, gently press on the potatoes to slightly crush them without breaking them completely.
  5. Peel the garlic cloves and slightly crush them with the side of a knife, then place them on the tray with the potatoes.
  6. Drizzle the potatoes with extra virgin olive oil, salt, and pepper to taste.
  7. If desired, sprinkle with chosen rosemary or aromatic herbs and grated cheese.
  8. Bake in a preheated oven at 200°C until the potatoes are well browned and crispy on the edges, generally for about 20 minutes.
  9. Serve hot as a side dish.

Crushed potatoes can be adapted in a thousand ways: for example, they can be flavored with spices like paprika or curry, or you can add grated pecorino cheese instead of Parmesan for a more rustic and bold touch.
