Crispy Potato Fritters

Crispy potato fritters, also known as “rosti” in some regions, are a simple and delicious dish. Here’s an Italian version of the recipe:

Ingredients

  • 4-5 medium-sized potatoes
  • 2 tablespoons of flour
  • 1 egg
  • Salt and pepper to taste (as needed)
  • Olive oil or butter for frying
  • (Optional) Grated Parmesan or other cheeses to taste
  • (Optional) Herbs such as rosemary or parsley

Preparation

  1. Peel the potatoes and grate them using a coarse grater.
  2. Squeeze the grated potatoes well to remove as much liquid as possible.
  3. In a bowl, mix the grated potatoes with the egg, flour, salt, pepper, and if desired, grated cheese and chopped herbs.
  4. Heat a pan with a drizzle of olive oil or a knob of butter.
  5. Form small fritters from the potato mixture and lay them in the pan, flattening them slightly to make them flat.
  6. Cook on both sides until they become golden and crispy.
  7. Serve hot.

If you want to give an even more Italian touch, you can add some diced smoked pancetta and chopped parsley to the mixture for a more intense flavor.

Crispy potato fritters can be served as an appetizer, side dish, or main course, especially when paired with a fresh salad.

Curiosity

Every country has its version of potato cakes. In Italy, for example, in the Trentino-South Tyrol region, we find “rosti” very similar to potato fritters, often served as a side dish with meat dishes.
