Crispy Potato Fritters
17/11/2023Crispy potato fritters, also known as “rosti” in some regions, are a simple and delicious dish. Here’s an Italian version of the recipe:
Ingredients
- 4-5 medium-sized potatoes
- 2 tablespoons of flour
- 1 egg
- Salt and pepper to taste (as needed)
- Olive oil or butter for frying
- (Optional) Grated Parmesan or other cheeses to taste
- (Optional) Herbs such as rosemary or parsley
Preparation
- Peel the potatoes and grate them using a coarse grater.
- Squeeze the grated potatoes well to remove as much liquid as possible.
- In a bowl, mix the grated potatoes with the egg, flour, salt, pepper, and if desired, grated cheese and chopped herbs.
- Heat a pan with a drizzle of olive oil or a knob of butter.
- Form small fritters from the potato mixture and lay them in the pan, flattening them slightly to make them flat.
- Cook on both sides until they become golden and crispy.
- Serve hot.
If you want to give an even more Italian touch, you can add some diced smoked pancetta and chopped parsley to the mixture for a more intense flavor.
Crispy potato fritters can be served as an appetizer, side dish, or main course, especially when paired with a fresh salad.
Curiosity
Every country has its version of potato cakes. In Italy, for example, in the Trentino-South Tyrol region, we find “rosti” very similar to potato fritters, often served as a side dish with meat dishes.
