Crumbly Tart with Ricotta and Jam

Ingredients
For the crumbly dough:
- 300g of type 00 flour
- 150g of sugar
- 150g of cold butter, cubed
- 1 egg
- 1 yolk
- A pinch of salt
- 1/2 a packet of baking powder
For the filling:
- 250g of ricotta
- 100g of sugar
- Jam of your choice (about 200g)
- Icing sugar for decoration (optional)
Preparation
- In a large bowl, mix together the flour, sugar, salt, and baking powder.
- Add the cold, cubed butter and work it with your fingertips until you get a sandy mixture.
- Make a well in the center and add the egg and yolk. Quickly work the mixture to form a smooth dough, then wrap it in cling film and let it rest in the refrigerator for 30 minutes.
- In the meantime, in another bowl, combine the ricotta with sugar and mix until smooth.
- Take a pie tin (preferably with a springform) and line the bottom with 2/3 of the crumbly dough.
- Spread a uniform layer of jam over the crumbly dough base.
- Distribute the ricotta mixture on top and level it with a spatula.
- Crumble the remaining dough over the entire surface of the tart.
- Bake in a preheated oven at 180 °C for about 30-35 minutes or until the surface is golden brown.
- Let the crumbly tart cool before dusting with icing sugar, if desired.
Once baked, this tart has a crunchy base and a creamy, delicious filling. The combination of the sweetness of the ricotta and the tartness of the jam makes this dessert particularly appreciated. You can choose your favorite jam, from classic flavors like apricot or berry to more original ones, such as fig or orange.
