Crispy Coffee Biscuits
17/11/2023Crispy coffee biscuits are delicious and perfect for a coffee break. Here is the recipe to prepare them:
Ingredients
- 250 g of all-purpose flour
- 120 g of cold butter, cut into cubes
- 100 g of granulated sugar
- 1 large egg
- 1 tablespoon of coffee powder, or 30 ml of very concentrated espresso coffee
- 1/2 a packet of baking powder
- A pinch of salt
- Icing sugar (optional, for decoration)
Preparation
- In a large bowl, sift the flour with the baking powder and add the pinch of salt.
- Add the cold butter and work the mixture with your fingertips until you get a sandy compound.
- Incorporate the granulated sugar.
- Prepare the espresso coffee in a small cup and let it cool, or use the coffee powder. If you use the coffee powder, mix it directly with the dry ingredients. If you use liquid coffee, wait for the next step.
- Break the egg in a bowl, lightly beat it with a fork and add the cooled coffee (if you are using liquid coffee). Stir to blend.
- Pour the mixture of egg and coffee (or just the egg, if the coffee is in powder form) into the dry ingredients and quickly knead until you get a homogeneous compound.
- Cover the dough with plastic wrap and let it rest in the fridge for at least 30 minutes.
- Pre-heat the oven to 180 °C.
- Roll out the dough on a lightly floured surface to a thickness of about 5 mm and cut out the biscuits with a shaped cutter of your choice.
- Arrange the biscuits on a baking tray lined with parchment paper, leaving a bit of space between each one.
- Bake for 10-12 minutes or until the edges begin to turn golden.
- Remove from the oven and let the biscuits cool on a wire rack.
- If desired, dust with icing sugar before serving.
