Crouton with Benedict Eggs and Bacon

I can provide you with my version of the crouton with Benedict eggs and bacon, which is a variant of the classic Eggs Benedict.

Ingredients

  • 4 slices of homemade bread
  • 8 slices of bacon
  • 4 large eggs
  • 2 egg yolks
  • 100g of unsalted butter
  • 1 tablespoon of lemon juice or white vinegar
  • Salt and pepper to taste
  • A pinch of paprika (optional)
  • Water and white vinegar for poaching the eggs

Preparation

  1. Toast the slices of bread until they are crispy. You can do this in a toaster or in a pan with a little extra virgin olive oil.
  2. In a pan, cook the bacon until it becomes crispy. Set aside on paper towels.
  3. Bring a pot of water with a splash of vinegar to a boil. Lower the heat to a light simmer. Break an egg into a cup and then gently pour it into the water. Cook for 3-4 minutes for a still soft yolk or until desired doneness. Remove with a slotted spoon and set aside on kitchen paper. Repeat for each egg.
  4. For the hollandaise sauce: Melt the butter in a saucepan and let it cool slightly. In a heat-resistant bowl, place the two egg yolks and 1 tablespoon of cold water. Set the bowl over a pot of simmering water, like a double boiler (the water should not touch the bottom of the bowl), and whisk the yolks until they become frothy, adding the melted butter slowly. Add the lemon juice, salt and pepper, continuing to whisk until you obtain a smooth sauce. Be careful not to overcook to avoid the yolks from curdling.
  5. Assemble the dish by placing the toasted bread slices on the plate, followed by a slice of crispy bacon and then a poached egg on each. Drizzle with the hollandaise sauce and sprinkle with a pinch of paprika, if desired, for a touch of color and flavor.

As a final touch, you might add a little chopped parsley or chives for a fresher taste and a note of color.
