Ingredients

  • 200 g of fresh champignon mushrooms
  • 2 cloves of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley
  • 100 g of creamy cheese (such as Philadelphia or ricotta)
  • Homemade bread or baguette

Preparation

  1. Clean the champignon mushrooms well, removing any soil residues, and chop them into small pieces.
  2. Heat the extra virgin olive oil in a frying pan and add the peeled and crushed garlic cloves. Sauté for a couple of minutes without burning them.
  3. Add the champignon mushrooms to the pan, season with salt and pepper to taste, and cook over medium heat for about 10 minutes, stirring occasionally, until the mushrooms are golden brown and their release of moisture has evaporated.
  4. Remove the garlic cloves and transfer the mushrooms to a blender. Add the chopped parsley and blend until a creamy consistency is obtained.
