Croissants filled with jam

Ingredients

  • 500 g of all-purpose flour
  • 120 ml of water
  • 130 ml of milk
  • 1 egg (plus one yolk for brushing)
  • 100 g of sugar
  • 100 g of soft butter
  • 12 g of fresh yeast
  • Grated zest of one lemon
  • A pinch of salt
  • Jam of your choice for the filling
  • Icing sugar for decoration (optional)

Preparation

  1. Dissolve the fresh yeast in warm water.
  2. In a large bowl, pour the flour and make a well in the center, adding the sugar, soft butter, grated lemon zest, salt, the egg, and the water with yeast.
  3. Start mixing from the center, gradually adding the milk until a smooth and elastic dough is formed.
  4. Shape the dough into a ball and let it rise in a warm and dry place, covered with a cloth, for about 2 hours or until it doubles in volume.
  5. Then, take the dough, deflate it gently and roll it out on a floured surface to a thickness of about 5 mm.
  6. Cut the dough into isosceles triangles (like slicing pizza).
  7. Place a teaspoon of jam in the center of each triangle, then roll up the croissants starting from the wider base.
  8. Arrange the croissants on a baking tray lined with parchment paper, leaving a little space between each one.
  9. Let the croissants rise for another 30 minutes.
  10. Brush them with a beaten egg yolk and, if desired, sprinkle with granulated sugar.
  11. Bake the croissants in a preheated oven at 180 °C for about 15-20 minutes or until golden brown.
  12. Once baked, let cool on a wire rack and, if you wish, decorate with icing sugar.
