Ingredients
- Zucchinis (2 medium-sized)
- Extra virgin olive oil
- Fine salt (to taste)
- Black pepper (optional)
- Aromatic herbs of your choice (such as rosemary or thyme, optional)
- Flour (some prefer to use it for a crunchier texture, optional)
- Grated Grana or Parmesan cheese (optional for a more Italian version)
Preparation
- Preheat the oven to 200°C (392°F).
- Wash the zucchinis and remove the ends.
- Slice the zucchinis into thin rounds, preferably of even thickness to ensure even cooking.
- If you opt to use flour, place it in a bowl and coat the zucchini slices in the flour, shaking off the excess.
- Arrange the zucchini rounds on a baking tray lined with parchment paper, taking care not to overlap them.
- Lightly brush the zucchini rounds with olive oil and sprinkle with fine salt. If desired, also add ground black pepper and chopped aromatic herbs.
