Crispy Vegetable Fritters

Crispy vegetable fritters are a great option for a tasty appetizer or a side dish that’s a little out of the ordinary. Here’s how to prepare them with an Italian twist:

Ingredients

  • 1 zucchini
  • 1 carrot
  • 1/2 onion
  • 100 g of flour
  • 1 egg
  • 120 ml of sparkling water (for a lighter and crispier batter)
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)
  • Oil for frying (preferably seed oil for high-temperature frying)

Preparation

  1. Start by grating the zucchini and carrots and finely slicing the onion. Squeeze out the excess water from the grated vegetables; this will help the fritters stay crispier.
  2. In a large bowl, mix the flour with salt, pepper, and nutmeg.
  3. Add the egg and start mixing, gradually pouring the sparkling water until a semi-thick batter is formed.
  4. Stir in the grated vegetables and mix everything well.
  5. Heat plenty of oil in a deep pan, and when it reaches the ideal temperature (about 180 °C), use a spoon to take a portion of the batter with vegetables and pour it into the hot oil.
  6. Fry the fritters until they are golden and crispy, then drain them on paper towels to remove excess oil.
  7. Serve hot, perhaps accompanied by a yogurt sauce or tzatziki for a fresh contrast.
