  3. Lower the heat, carefully turn the fillets, and cook for another 2-3 minutes on the meat side, or until the desired doneness (note that the salmon will be juicier if left a little rare).
  4. Meanwhile, briefly toast the flatbreads in a hot pan to make them warm and slightly crispy.
