Ingredients
- 4 salmon fillets with skin (about 150-200 g each)
- 4 flatbreads (you can use flat breads like piadina or thin focaccia)
- Extra virgin olive oil
- Salt and pepper to taste
- 1 lemon (for juice and grated zest)
- Fresh aromatic herbs such as dill or parsley (optional)
Preparation
- Prepare the salmon fillets making sure they are boneless and with the skin facing down on the cutting board, salt and pepper them lightly.
- Heat a non-stick pan over medium-high heat and add a drizzle of olive oil. When the oil is hot, place the salmon with the skin side down. Cook without moving for about 3-4 minutes until the skin becomes crispy.
- Lower the heat, carefully turn the fillets, and cook for another 2-3 minutes on the meat side, or until the desired doneness (note that the salmon will be juicier if left a little rare).
- Meanwhile, briefly toast the flatbreads in a hot pan to make them warm and slightly crispy.
- Squeeze some lemon juice over the salmon fillets and add some grated zest for a fresh citrus flavor.
- Place each salmon fillet on its flatbread and, if desired, add chopped fresh herbs like dill or parsley for a touch of color and flavor.
