Crispy Salmon

Ingredients

  • Salmon fillets with skin (about 150-200 grams per person)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Herbs of choice (such as dill or thyme)

Preparation

  1. Preheat the oven to 200 °C if you prefer to bake it, or prepare a non-stick pan if you choose to cook it on the stove.
  2. Pat the salmon fillets dry with kitchen paper, making sure the skin is as dry as possible.
  3. Season the salmon with salt and pepper on both sides.
  4. If available, sprinkle finely chopped aromatic herbs on the flesh side of the salmon.
  5. Heat the oil in a non-stick pan over medium-high heat.
  6. When the oil is hot, lay the salmon in the pan, skin-side down. Cook for about 3-5 minutes until the skin becomes crispy.
  7. Flip the salmon and cook for another 3-5 minutes on the flesh side or until it’s done to your liking. If you prefer the oven, bake the salmon skin-side down for about 12-15 minutes.
  8. Serve immediately.

For an Italian twist, you can serve the crispy salmon over a bed of asparagus risotto or next to a serving of Sicilian caponata for a contrast of flavors and textures.
