Crispy Shrimps

Preparing crispy shrimps is a fantastic idea for a main course or an elegant appetizer. Here’s how to give an Italian touch to this delicacy with a simple and tasty recipe.

Ingredients

  • 12 medium-sized fresh shrimps
  • Wheat flour, as needed
  • Corn flour (for extra crispness), as needed
  • 2 eggs
  • Breadcrumbs, as needed
  • Salt, as needed
  • Pepper, as needed
  • Extra virgin olive oil or frying oil

Preparation

  1. Start by cleaning the shrimps. Remove the head, peel off the shell leaving the last part of the tail attached, and make a light incision on the back to remove the intestine. Then rinse them under cold water and dry well.
  2. Prepare three deep plates: put the wheat flour in one, beat the eggs with a pinch of salt and pepper in another, and the mixture of breadcrumbs and corn flour in the third.
  3. Dip each shrimp first in the wheat flour, then in the egg, and finally in the breadcrumb and corn flour mixture, making sure to cover them completely.
  4. Heat plenty of oil in a pan or deep fryer until it reaches a temperature of about 180°C (356°F).
  5. Dip the shrimps in the hot oil and fry until they are golden and crispy, which will take about 2-3 minutes.
  6. Drain them on paper towels to remove excess oil.
  7. Serve hot, accompanied by lemon wedges.

The crispy shrimps can be served with a variety of sauces, but a typically Italian one is garlic and oil sauce, made with extra virgin olive oil, crushed garlic, and minced red chili pepper, or a simple mayonnaise flavored with lemon and aromatic herbs.
