Crispy Onion

Crispy onions are a great side dish or additional ingredient to enrich salads, burgers, and many other dishes. Here’s the recipe for making crispy onions:

Ingredients

  • 2 large white or golden onions
  • Flour as needed
  • Salt as needed
  • Pepper as needed
  • Oil for frying (vegetable or peanut)

Preparation

  1. Start by thinly slicing the onions, creating thin rings or half-moons.
  2. Separate the onion rings and soak them in a bowl of cold water for about 10 minutes. This will help to mitigate the intensity of the flavor and make them crispy after cooking.
  3. Heat oil in a deep pan or a deep fryer to about 180 °C (356 °F).
  4. Meanwhile, drain the onions well and dry them with kitchen paper.
  5. Put some flour on a plate or in a plastic bag, season it with salt and pepper to taste.
  6. Dredge the onions in flour until they are well coated.
  7. Fry the onions in the hot oil in small batches at a time, to prevent the oil temperature from dropping.
  8. Once the onions are golden and crispy, usually after 2-3 minutes, remove them with a skimmer and place them on a plate lined with paper towels to remove the excess oil.
  9. Season them lightly with salt while they are still warm and serve.

Interesting Facts

Crispy onions are often used in America to garnish steakhouse salads or other typical dishes of Tex-Mex cuisine. Their popularity then spread to many other world cuisines as a crunchy and flavorful touch for various dishes. In Italy, we can consider them an alternative interpretation of the classic “cipolle in agrodolce” (sweet and sour onions), which are usually served as a side dish.
