Crispy Hake with Grapefruit Salad

Ingredients

  • 4 hake fillets (about 150-200 g each)
  • Salt and pepper to taste
  • Corn flour for breading
  • Extra virgin olive oil
  • 2 grapefruits
  • A bunch of tender greens (such as lettuce, arugula, etc.)
  • A sprig of fresh parsley
  • A few tablespoons of lemon juice
  • Toasted sesame seeds (optional)

Preparation

  1. Preheat the oven to 200 °C - if you prefer, you can also cook the hake in a pan.
  2. Pat the hake fillets dry with kitchen paper to remove excess moisture. Season with salt and pepper.
  3. Coat the fillets in corn flour so they are covered with a thin, even layer.
  4. Drizzle a baking tray with a stream of extra virgin olive oil, arrange the breaded hake fillets on it, and drizzle them with another stream of oil.
  5. Bake for about 15-20 minutes or until the breading is golden brown and crispy.
  6. While the fish is cooking, prepare the grapefruit salad. Peel the grapefruits to the flesh, cut into segments and place them in a bowl.
  7. Add the washed and dried salad greens. Dress with oil, lemon juice, salt, pepper, and chopped parsley.
  8. Once the hake is ready, plate it and add the grapefruit salad on the side.
  9. For an extra touch, sprinkle with toasted sesame seeds.
