Crispy Zucchini Fritters

Ingredients

  • 2 medium zucchini
  • 100 g of flour
  • 2 eggs
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)
  • Seed oil for frying

Preparation

  1. Start by washing and drying the zucchini. Grate them with a coarse grater and place the result in a bowl.

  2. Add the eggs to the grated zucchini and mix well. Then, incorporate the grated Parmesan, a pinch of salt, pepper, and nutmeg to your taste.

  3. Gradually add the flour, a little at a time, and continue stirring to avoid lumps until you get a homogeneous mixture.

  4. Heat plenty of seed oil in a frying pan. When the oil is hot, use a spoon to take portions of the batter and gently pour them into the oil.

  5. Fry the fritters until they become golden and crispy on both sides, then drain them on paper towels to remove excess oil.

  6. Serve them hot or warm, perhaps accompanied by a pinch of salt and a squirt of lemon juice to enhance their flavor.
