Ingredients

  • For the crepes:

    • 125 g of type 00 flour
    • 250 ml of milk
    • 2 eggs
    • A pinch of salt
    • Butter, as needed for cooking the crepes
  • For the filling:

    • 100 g of cured ham, thinly sliced
    • 150 g of brie
    • 60 g of walnuts, coarsely chopped
    • Salt, if necessary
    • Black pepper, to taste
  • For gratinating (optional):

    • Béchamel sauce, as needed
    • Grated Parmesan cheese, to taste

Preparation

  1. Begin by preparing the batter for the crepes by mixing the flour with the eggs, then gradually add the milk to avoid lumps. Add a pinch of salt and let the batter rest for about 30 minutes.

  2. Heat a non-stick pan (preferably for crepes) and lightly grease it with butter. Pour a ladle of batter and spread it over the entire surface by tilting the pan. Cook for about 1-2 minutes per side, then remove the crepe and repeat the process until the batter is finished.

  3. Prepare the filling by cutting the brie into thin slices and chopping the ham and walnuts, if necessary.

  4. Take a crepe, lay some slices of brie on it, some ham, and a handful of chopped walnuts. If you wish, season lightly with salt and pepper.

  5. Roll up the filled crepe onto itself or fold it like a wallet, and lay it in a previously buttered baking dish.

  6. (Optional) If you want to gratinate the crepes, prepare a light béchamel sauce and pour it over the filled crepes in the baking dish. Sprinkle with grated Parmesan cheese.

  7. Bake in a preheated oven at 200 °C for 10-15 minutes, or until the surface is golden and crispy.

  8. Serve the crepes hot, perhaps with a fresh salad on the side.
