Ham and Mushroom Crepes

Ingredients
- 125 g of flour
- 250 ml of milk
- 2 eggs
- Salt, to taste
- Butter, to taste (for greasing the pan)
- 250 g of mushrooms (champignons or porcini)
- 150 g of cooked ham, sliced
- 200 ml of bechamel sauce
- 100 g of grated Parmesan cheese
- Extra-virgin olive oil, to taste
- Salt and pepper, to taste
- Chopped parsley, optional (for garnishing)
Preparation
- Start by preparing the crepe batter: in a bowl, mix the flour with the eggs, a pinch of salt, and the milk, blending well to obtain a smooth batter without lumps. Let it rest for about 30 minutes.
- In the meantime, clean the mushrooms by removing the earthy part of the stem and slice them. Sauté the mushrooms in a pan with a little olive oil and a clove of garlic until they are golden. Season with salt and pepper to taste and set aside.
- Lightly grease a non-stick pan with butter and heat over medium heat. Pour a ladle of batter and spread it evenly by tilting the pan to form a thin crepe. Cook for 1-2 minutes per side or until golden. Repeat until all the batter is used.
- Prepare the bechamel sauce according to your preferred recipe or heat the pre-made one.
- Now assemble the crepes: on each crepe, place a slice of cooked ham and a generous spoonful of sautéed mushrooms, then roll up or fold like a wallet.
- Place the crepes in a buttered baking dish, pour the bechamel sauce over the top, and sprinkle with grated parmesan cheese.
- Bake in a preheated oven at 180 °C for about 20 minutes or until the surface is golden brown and slightly crispy.
- Serve hot, possibly garnished with chopped parsley for a touch of freshness.
