Crespelle with Gorgonzola and Radicchio

Ingredients

  • 100 g of flour
  • 2 eggs
  • 250 ml of milk
  • 1 pinch of salt
  • 200 g of red radicchio
  • 150 g of gorgonzola
  • 50 g of grated Parmesan cheese
  • 30 g of butter
  • 200 ml of béchamel sauce
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start with the preparation of the crepes. In a bowl, beat the eggs with a pinch of salt. Add flour alternately with the milk, until you get a smooth and homogeneous batter. Let the batter rest for about 30 minutes.

  2. In the meantime, clean the radicchio, cut it into fine strips and sauté in a pan with a drizzle of extra virgin olive oil, salt, and pepper, for about 5 minutes, until it has slightly softened. Set aside.

  3. Prepare the crepes by lightly greasing a non-stick pan with a little oil. Pour a ladle of batter and tilt the pan to evenly distribute the mixture. Cook the crepes on both sides until golden, then continue until all the batter is used up.

  4. Now, cut the gorgonzola into cubes and mix it with the sautéed and cooled radicchio.

  5. Stuff each crepe with some of the radicchio and gorgonzola mixture, then roll up or fold like a wallet.

  6. Place the crepes in a buttered baking dish, cover them with the béchamel sauce and sprinkle with the grated Parmesan cheese.

  7. Bake in a preheated oven at 180 °C for about 20 minutes or until the surface is golden and crispy.

  8. Serve the crepes hot.
