Zucchini, Cooked Ham and Stracchino Cheese Crepe

Ingredients

  • For the crepes:
    • 250 ml of milk
    • 100 g of flour
    • 2 eggs
    • A pinch of salt
    • Butter as needed (for greasing the pan)
  • For the filling:
    • 2 medium zucchinis
    • 150 g of cooked ham
    • 200 g of stracchino cheese
    • Extra virgin olive oil
    • Salt and pepper as needed
    • (Optional) Aromatic herbs such as thyme or basil

Preparation

  1. Let’s start with the crepes: in a bowl, beat the eggs with a pinch of salt. Gradually add the flour alternatively with the milk and mix until you obtain a smooth and homogenous batter. Let the batter rest for about 30 minutes.
  2. In the meantime, wash and slice the zucchinis into thin rounds. In a pan, heat a drizzle of oil and sauté the zucchinis until golden brown. Season with salt and pepper to taste, and add aromatic herbs if desired.
  3. Heat a non-stick pan and lightly grease it with a bit of butter. Pour a ladle of batter and tilt the pan to distribute the mix evenly. Cook the crepe on both sides until it becomes lightly golden. Repeat the process until all the batter is used up.
  4. Stuff each crepe with some cooked ham, stracchino cheese, and sautéed zucchinis. Fold in half and then again to form a fan or roll them up, depending on your preference.
  5. Arrange the stuffed crepes in an oven dish, drizzle some oil on top, and if you wish, add some more pieces of stracchino cheese. You can put them in the oven for a few minutes to make the cheese more melting.
  6. Serve warm and enjoy this delicious mix of flavors.
