Crepes parcels with poached egg

Crepes parcels with poached egg are an elegant and delicious dish, perfect for brunch or a special lunch. Taking into account your preferences, I will try to make the recipe as clear as possible. Here’s how to proceed:

Ingredients

  • For the crepes:
    • 100 g of flour
    • 2 eggs
    • 300 ml of milk
    • A pinch of salt
    • Butter for greasing the pan
  • For the filling:
    • 200 g of fresh or frozen spinach
    • 100 g of ricotta
    • Nutmeg to taste
    • Salt and pepper to taste
  • For the poached eggs:
    • 4 very fresh eggs
    • White wine vinegar to taste
  • To serve:
    • Melted butter to taste
    • Grated Parmesan to taste
    • Salt and pepper to taste

Preparation

  1. Start by preparing the crepes by mixing the flour, eggs, milk, and a pinch of salt in a bowl until you have a smooth, lump-free mixture. Let the batter rest for about 30 minutes.

  2. Meanwhile, cook the spinach in a pan with a little oil, salt, and pepper until it reduces in volume. Once ready, mix it with the ricotta, adjust for salt, pepper, and nutmeg to taste.

  3. Heat a lightly buttered non-stick pan. Pour a ladle of batter, tilting the pan to spread it evenly. Cook for about one minute or until the edges start to lift, then flip the crepe and cook the other side for about 30 seconds. Repeat until all the batter is used.

  4. To prepare the poached eggs, bring a pot of water to a boil and add a little white wine vinegar. Crack an egg into a cup and then gently pour it into the boiling water. Cook for 3-4 minutes, then remove with a slotted spoon and set aside on paper towels to absorb excess water. Repeat with the other eggs.

  5. Place a portion of the spinach and ricotta mixture in the center of each crepe. Place a poached egg in the center and close the crepe into a parcel, tying it with a chive or kitchen string.

  6. Arrange the parcels in a buttered baking dish, pour over some melted butter, and sprinkle with abundant Parmesan. Bake in a preheated oven at 180°C for a few minutes, just long enough to melt the Parmesan and warm the parcels.

  7. Serve the parcels hot, with a pinch of salt and pepper on top if desired.

Crepes parcels with poached egg are a dish that combines the delicacy of crepes with the creaminess of ricotta and the surprise of the poached egg at the center. This preparation is a sophisticated way of presenting simple ingredients full of flavor.
