Cheesecake with Crème Brûlée

Cheesecake with crème brûlée is a decadent interpretation that unites two classic desserts. The preparation involves making a cheesecake base and then covering it with a layer of crème brûlée, which is caramelized on the surface before serving.

Ingredients for the cheesecake base:

  • 200 g of digestive biscuits
  • 100 g of melted butter

Ingredients for the cheesecake filling:

  • 500 g of cream cheese (such as Philadelphia)
  • 120 g of sugar
  • 2 whole eggs
  • 1 egg yolk
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of lemon juice

Ingredients for the crème brûlée:

  • 300 ml of fresh cream
  • 4 egg yolks
  • 70 g of sugar
  • 1 teaspoon of vanilla extract
  • Brown sugar for caramelization

Preparation

  1. For the base, blend the biscuits in a mixer until you have a fine powder. Mix the crushed biscuits with the melted butter to get a homogeneous mixture. Press this mixture onto the bottom of a previously buttered and floured springform pan, forming a compact base. Refrigerate to firm up for about 30 minutes.

  2. For the cheesecake filling, beat the cream cheese with sugar until smooth and even. Add the eggs, the yolk, vanilla extract, and lemon juice, and continue beating until the mixture is well blended. Pour the cream obtained onto the biscuit base and bake in a preheated oven at 160 °C for about 40-45 minutes, or until the cheesecake appears almost set, but still slightly wobbly in the center.

  3. Allow the cheesecake to cool completely, then prepare the crème brûlée. Heat the cream with the vanilla extract until almost boiling. Meanwhile, beat the egg yolks with the sugar until light and frothy. Gradually add the hot cream to the yolks, stirring continuously. Pour the crème brûlée over the cooled cheesecake and level it with a spatula.

  4. Bake again in a water bath at 150 °C for about 30-40 minutes, or until the cream is set. Remove from the oven and let cool, then refrigerate for at least 2 hours.

  5. Before serving, sprinkle the top layer with brown sugar and caramelize with a cooking torch until a golden and crispy crust is formed.
