Creamy Strawberry Cake
17/11/2023The creamy strawberry cake is a delicious dessert that celebrates the fresh taste of this fruit. Here is a recipe you can follow to prepare a creamy strawberry cake with an Italian twist.
Ingredients
For the base:
- 200 g of dry biscuits (like Digestive)
- 100 g of melted butter
For the cream:
- 500 g of mascarpone
- 200 ml of heavy cream
- 100 g of powdered sugar
- 1 sachet of vanilla sugar
- 200 g of fresh strawberries
For the decoration:
- Fresh strawberries as needed
- Powdered sugar as needed
Preparation
- Start by crushing the dry biscuits until you get a coarse flour. You can do this with a blender or by placing them in a bag and rolling a rolling pin over it.
- Melt the butter and mix it with the crushed biscuits until you have a homogeneous mixture.
- Line the bottom of a springform pan (preferably 22-24 cm in diameter) with parchment paper, and spread the biscuit mixture over it, pressing down well with the back of a spoon to create a compact base. Place in the refrigerator to cool for about 30 minutes.
- For the cream, whip the heavy cream until stiff peaks form and set aside. In another bowl, beat the mascarpone with powdered sugar and vanilla sugar until you have a smooth cream.
- Gently fold the whipped cream into the mascarpone mixture, trying not to deflate it. Add the strawberries previously washed, dried, and cut into small pieces.
- Pour the cream obtained over the biscuit base in the refrigerator and level the surface with a spatula. Put back in the refrigerator for at least 4 hours, better if overnight.
- Before serving, decorate with fresh strawberries sliced or as you prefer, and if you like, a dusting of powdered sugar.
