Creamy Salmon and Mushroom Pasta

Creamy salmon and mushroom pasta is a delicate and flavorful dish that combines the flavors of the sea with those of the woods. Here is the recipe with a small Italian twist to enhance its flavors:

Ingredients

  • 320g of pasta (penne or tagliatelle work well)
  • 200g of smoked salmon
  • 200g of champignon mushrooms
  • 1 small onion
  • 1 clove of garlic
  • 200ml of heavy cream
  • 1 bunch of fresh parsley
  • 50ml of dry white wine
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the mushrooms with a damp cloth and slice them. Thinly slice the onion and garlic.
  2. In a pan, sauté the onion and garlic in extra virgin olive oil until they become translucent.
  3. Add the mushrooms to the pan and sauté over medium heat until they release their water.
  4. Deglaze with white wine and let the alcohol evaporate.
  5. Cut the salmon into strips and add it to the mushrooms, letting it flavor for a few minutes.
  6. Pour the heavy cream into the pan, mix well and let it cook for 5 minutes on low heat. Adjust with salt and pepper.
  7. Meanwhile, cook the pasta in plenty of salted water following the package instructions for al dente cooking.
  8. Drain the pasta and transfer it into the pan with the salmon and mushroom sauce.
  9. Sauté the pasta with its sauce for 1-2 minutes, to flavor it well.
  10. Plate and garnish with chopped fresh parsley.

Curiosity

Smoked salmon gives an intense and distinctive flavor to the dish and pairs well with the creaminess of the heavy cream and the earthiness of the mushrooms. In Italy, it is common to further enrich the flavor with fresh herbs such as parsley, which goes wonderfully with the ingredients of this recipe.

If you want to further enrich the dish, you could add some asparagus tips or sliced zucchini for an extra touch of vegetables. Enjoy your meal!
