Creamy zucchini and stracchino risotto

Ingredients
- 320 g of risotto rice (such as Arborio or Carnaroli)
- 2 medium zucchini
- 150 g of stracchino cheese
- 1 small onion
- 1 liter of vegetable broth
- 50 ml of dry white wine
- 30 g of butter
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan cheese to taste (optional)
- A few mint leaves for garnish (optional)
Preparation
- Start by preparing the vegetable broth and keep it warm on a low flame.
- Wash the zucchini thoroughly, dice them into small pieces, and set aside.
- Finely chop the onion and sauté it in a saucepan with a drizzle of extra virgin olive oil.
- Add the diced zucchini to the sauté and cook for about 5 minutes, until they start to soften.
- Pour the rice into the saucepan and toast it until the grains become translucent, stirring constantly.
- Deglaze with white wine and let the alcohol evaporate.
- Begin adding the hot vegetable broth, one ladle at a time, continuing to stir. Wait for the rice to absorb almost all of the broth before adding the next ladle.
- Continue to cook the rice, adding broth as needed, for about 16-18 minutes or until the rice is al dente.
- When the rice is almost cooked, adjust with salt and pepper.
- Remove the saucepan from the heat, incorporate butter and stracchino cheese in pieces, mixing well until you achieve a creamy texture.
- If desired, you can add some grated Parmesan cheese to make the risotto even more flavorful.
- Let the risotto rest for a few minutes before serving.
- Plate and, if you like, garnish with fresh mint leaves for a touch of color and freshness.
