Creamy zucchini and stracchino risotto

Ingredients

  • 320 g of risotto rice (such as Arborio or Carnaroli)

  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by preparing the vegetable broth and keep it warm on a low flame.
  2. Wash the zucchini thoroughly, dice them into small pieces, and set aside.
  3. Finely chop the onion and sauté it in a saucepan with a drizzle of extra virgin olive oil.
  4. Add the diced zucchini to the sauté and cook for about 5 minutes, until they start to soften.
  5. Pour the rice into the saucepan and toast it until the grains become translucent, stirring constantly.
