Creamy Pasta with Peppers and Cheese

Here’s a recipe for a delicious creamy pasta with peppers and cheese, with an Italian twist.

Ingredients

  • 320g of pasta, such as penne or rigatoni
  • 2 red bell peppers
  • 1 white onion
  • 2 cloves of garlic
  • 200 ml of cooking cream
  • 100g of grated cheese (pecorino or parmesan for an authentic Italian flavor)
  • Extra-virgin olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)
  • 1/2 glass of white wine (optional)

Preparation

  1. Begin by roasting the peppers. You can do this in the oven or directly on the stove flame until they turn black on the outside. Then wrap them in aluminum foil or put them in a food-safe plastic bag for 10 minutes; this will help remove the skin.
  2. Once cooled, peel them, remove the seeds and internal threads, and cut them into strips.
  3. Meanwhile, cook the pasta in plenty of salted water following the package instructions for al dente.
  4. In a large pan, heat a drizzle of extra-virgin olive oil and sauté the finely chopped onion and garlic until transparent.
  5. Add the pepper strips, salt, pepper, and if you like, deglaze with white wine allowing the alcohol to evaporate.
  6. Pour the cream into the pan and let it cook on medium-low heat until it slightly thickens.
  7. Add the grated cheese to the sauce and stir until it is completely melted.
  8. Drain the pasta and add it to the pan with the pepper sauce. Mix well to coat the pasta with the sauce.
  9. Serve hot, garnished with chopped fresh basil if you desire a touch of freshness and color.
