Ingredients

  • 320 g of pasta (for example penne, farfalle or linguine)
  • 200 ml of cooking cream
  • A mix of fresh aromatic herbs (basil, parsley, marjoram, thyme, etc.)
  • 2 cloves of garlic
  • 50 g of grated Parmesan cheese
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • (Optional) Grated lemon zest for a touch of freshness

Preparation

  1. Bring a pot of salted water to a boil and cook the pasta al dente according to the package instructions.
  2. Meanwhile, in a large pan, heat the extra virgin olive oil and add the peeled and crushed garlic cloves. Let them brown for a couple of minutes.
  3. Remove the garlic from the pan and lower the heat. Add the cream and let it warm up without boiling.
  4. Finely chop the chosen aromatic herbs and add them to the cream. Mix well to flavor the cream.
  5. Drain the pasta al dente, reserve some of the cooking water, and pour it into the pan with the cream.
  6. Add the grated Parmesan cheese and mix well the pasta with the herb cream. If necessary, add a little cooking water to make the dish creamier.
  7. Adjust with salt and pepper and, if you like, add a pinch of grated lemon zest to give a citrus note.
  8. Serve immediately.
