Creamy Pasta and Peas

Ingredients

  • 320g of pasta (mezze maniche, ditalini or the pasta you prefer)
  • 400g of peas (fresh or frozen)
  • 1 small onion
  • As much vegetable broth as needed
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper as needed
  • Grated Parmesan cheese (optional)
  • A sprig of fresh parsley (optional)

Preparation

  1. Start by finely chopping the onion and sautéing it in a pan with extra virgin olive oil until it becomes transparent.
  2. Add the peas to the pan and let them cook for a few minutes.
  3. Pour in enough vegetable broth to cover the peas and cook through. If you’re using frozen peas, the cooking will be quicker.
