Creamy Mushroom Pasta

Creamy mushroom pasta is a delicious and relatively simple dish to prepare. Here is a basic recipe you can follow:

Ingredients

  • 320 g of pasta (fettuccine, tagliatelle, or a shape of your choice)
  • 300 g of fresh mushrooms (champignons, porcini, mixed, etc.)
  • 1 clove of garlic
  • Fresh parsley to taste
  • 200 ml of cooking cream
  • 40 g of grated Parmesan cheese
  • Salt and black pepper to taste
  • Extra virgin olive oil
  • Dry white wine (optional)

Preparation

  1. Clean the mushrooms by removing any dirt residues, then slice them. In a large pan, heat a drizzle of extra virgin olive oil and add the whole clove of garlic, which you will leave to brown for a few minutes. Afterwards, remove the garlic.

  2. Add the sliced mushrooms to the pan and fry them over medium-high heat until they are well browned. If you like, you can deglaze with a bit of white wine and let the alcohol evaporate before proceeding.

  3. Lower the heat, add the cooking cream to the mushrooms, stir, and cook for a few minutes until the sauce begins to thicken. Season with salt and pepper according to your taste.

  4. Meanwhile, bring a pot of plenty of salted water to a boil and cook the pasta following the timing indicated on the package to achieve al dente cooking.

  5. Once the pasta is cooked, drain it, reserving some of the cooking water. Add the pasta to the pan with the mushroom sauce, mix well, and if necessary, add a little cooking water to make the sauce creamier.

  6. Serve the creamy mushroom pasta sprinkled with chopped fresh parsley and grated Parmesan cheese.

The choice of mushrooms can drastically change the flavor profile of this dish. Champignons have a delicate flavor and are easily available, but if you have the chance to use porcini or a mix of wild mushrooms, the result will be even richer and deeper.
