Creamy Mascarpone Cake

Ingredients

  • 250 g of mascarpone
  • 200 ml of whipping cream
  • 100 g of powdered sugar
  • 3 eggs
  • 1 packet of vanillin or the seeds of a vanilla pod
  • 1 pinch of salt
  • Butter and flour for the cake tin

For the base:

  • 200 g of dry biscuits
  • 100 g of melted butter

Preparation

  1. Start by preparing the base of the cake by crushing the dry biscuits in a mixer until you get a consistency similar to that of breadcrumbs. Mix the crushed biscuits with the melted butter until you have a homogeneous mixture.
  2. Line the bottom of a springform pan with parchment paper and spread the biscuit mixture, pressing it down well to create a compact base. Place the pan in the refrigerator for about 30 minutes to harden the base.
  3. In the meantime, separate the yolks from the whites of the eggs. Beat the yolks with the powdered sugar and vanillin (or vanilla seeds) until the mixture becomes frothy and pale.
  4. Add the mascarpone to the yolk mixture and continue to work until you obtain a smooth and even cream.
  5. In another container, whip the cream until it becomes firm.
  6. In a third container, beat the egg whites to stiff peaks with a pinch of salt.
  7. Gently fold the whipped cream into the mascarpone mixture, with movements from the bottom up so as not to deflate the mixture.
  8. Then add the beaten egg whites, always with gentle movements to maintain the airy structure of the mixture.
  9. Pour the filling over the cooled biscuit base and level the surface.
  10. Bake the cake in a preheated oven at 160 °C for about 1 hour, or until the surface is golden brown and the consistency at the center of the cake is firm to the touch.
  11. Once cooked, let the cake cool completely in the oven with the door slightly open to avoid thermal shocks that could cause cracks.
  12. Put the cake in the refrigerator and let it set for at least 4 hours before serving.
