Creamy Mascarpone Cake
17/11/2023The creamy mascarpone cake is a velvety and delicious dessert that wins everyone over at the first taste. Here’s what you need and how to prepare it.
Ingredients
- 250 g of mascarpone
- 200 ml of whipping cream
- 100 g of powdered sugar
- 3 eggs
- 1 packet of vanillin or the seeds of a vanilla pod
- 1 pinch of salt
- Butter and flour for the cake tin
For the base:
- 200 g of dry biscuits
- 100 g of melted butter
Preparation
- Start by preparing the base of the cake by crushing the dry biscuits in a mixer until you get a consistency similar to that of breadcrumbs. Mix the crushed biscuits with the melted butter until you have a homogeneous mixture.
- Line the bottom of a springform pan with parchment paper and spread the biscuit mixture, pressing it down well to create a compact base. Place the pan in the refrigerator for about 30 minutes to harden the base.
- In the meantime, separate the yolks from the whites of the eggs. Beat the yolks with the powdered sugar and vanillin (or vanilla seeds) until the mixture becomes frothy and pale.
- Add the mascarpone to the yolk mixture and continue to work until you obtain a smooth and even cream.
- In another container, whip the cream until it becomes firm.
- In a third container, beat the egg whites to stiff peaks with a pinch of salt.
- Gently fold the whipped cream into the mascarpone mixture, with movements from the bottom up so as not to deflate the mixture.
- Then add the beaten egg whites, always with gentle movements to maintain the airy structure of the mixture.
- Pour the filling over the cooled biscuit base and level the surface.
- Bake the cake in a preheated oven at 160 °C for about 1 hour, or until the surface is golden brown and the consistency at the center of the cake is firm to the touch.
- Once cooked, let the cake cool completely in the oven with the door slightly open to avoid thermal shocks that could cause cracks.
- Put the cake in the refrigerator and let it set for at least 4 hours before serving.
