  • 30 g of 00 flour
  • 2 egg whites

Preparation of the coffee creamy:

  1. Begin by soaking the gelatine sheets in cold water to soften them, or prepare the fish glue according to the package instructions.
  2. In a small pot, warm the milk and cream without bringing them to a boil.
  3. In a bowl, beat the egg yolks with the sugar until you have a frothy and pale mixture.
  4. Gradually pour the hot cream and milk mixture over the yolks, stirring continuously.
  5. Transfer the mixture back into the pot and cook over low heat until it reaches a slightly thickened consistency (custard).
  6. Remove the cream from the heat and add the squeezed and well-dissolved gelatine (or the prepared fish glue), mix well to fully incorporate.
  7. Add the espresso coffee and stir to blend it into the cream.
  8. Pour the mixture into molds and let cool in the refrigerator for at least 4 hours or until it is well set.

  1. Preheat the oven to 180 °C.
  2. Mix chopped almonds, icing sugar, and flour in a bowl.
  3. Whip the egg whites with a pinch of salt into stiff peaks.

  5. Spread the dough on a baking tray lined with parchment paper and bake for about 10-15 minutes or until golden.
