Creamy Apple Cake

Ingredients

  • 3-4 apples, depending on size
  • 3 eggs
  • 200 g of sugar
  • 300 g of all-purpose flour
  • 1 packet of baking powder
  • 200 ml of milk
  • 100 g of butter
  • 1 packet of vanillin or a teaspoon of vanilla extract
  • Grated zest of one lemon
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 degrees (160 if fan-assisted).
  2. Peel the apples and cut them into cubes or thin slices, as you prefer.
  3. In a large bowl, whisk the eggs with the sugar until you get a frothy mixture.
  4. Add the grated lemon zest and vanillin to flavor the mixture.
  5. Melt the butter and let it cool down. Once lukewarm, incorporate it into the mixture of eggs and sugar.
  6. Add the sifted flour with the baking powder and a pinch of salt to the mixture, alternating with milk to prevent lumps.
  7. Add the cut apples and gently mix to evenly distribute them.
  8. Pour the batter into a buttered and floured pan or one lined with parchment paper.
  9. Bake the cake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Take the cake out of the oven and let it cool before removing it from the pan.
