Sour Cherry Mousse

Sour Cherry Mousse is a delicate and delicious spoon dessert that combines the creaminess of the mousse with the slightly tart taste of sour cherries. Here’s how to prepare it:

Ingredients

  • 250 ml of fresh whipping cream
  • 200 g of sour cherries in syrup
  • 80 g of confectioner’s sugar
  • 2 sheets of gelatin (or 4 g of gelatin powder)
  • 1 tablespoon of sour cherry liqueur or alchermes (optional)
  • Sour cherries in syrup for garnish

Preparation

  1. Start by soaking the gelatin sheets in cold water for about 10 minutes.
  2. Take some of the sour cherries in syrup and blend them to a puree. If you prefer a more rustic result, you can also finely chop them.
  3. In a separate bowl, whip the cold cream with the confectioner’s sugar until it is firm and fluffy.
  4. Heat a little of the sour cherry syrup (about 50 ml) and dissolve the well-squeezed gelatin, stirring until completely dissolved. If you’re using gelatin powder, follow the instructions on the package for correct use.
  5. Combine the dissolved gelatin with the sour cherry puree and mix well. Add the chosen liqueur for an extra touch of flavor.
  6. Gently fold the sour cherry puree into the whipped cream, trying not to deflate the mixture.
  7. Pour the mousse into small glasses or a large bowl and let it cool in the refrigerator for at least 4 hours, but preferably overnight for an optimal texture.
  8. When serving, garnish with sour cherries in syrup and, if you like, with some of their syrup or a dusting of confectioner’s sugar.
