Preparation
- Preheat the oven to 180 °C and butter and flour a cake pan (or line it with parchment paper).
- Peel the apples, remove the cores, and cut them into thin slices.
- In a bowl, whip the eggs with the sugar using an electric whisk until the mixture is frothy and light.
- Add the now lukewarm melted butter to the egg and sugar mixture, and mix well.
- Combine the sifted flour, baking powder, and pinch of salt, then fold in gently.
- Gradually add the milk and continue stirring to achieve a smooth batter.
- Stir in the finely ground almonds and grated lemon zest.
- Pour half the batter into the prepared pan, then layer on a tier of apple slices.
- Cover with the remaining batter and decorate the top with another layer of apples and almond flakes.
