Cream Strudel with Annurche Apples and Orange

Strudel is a specialty typical of the Alpine regions, but here we will enrich it with an Italian touch by using Annurche apples, typical of Campania, and an aroma of orange. Here is the recipe for a cream strudel with Annurche apples and orange.

Ingredients

  • 1 roll of puff pastry or strudel dough
  • 3 Annurche apples
  • 1 orange (grated zest and juice)
  • 100 g of sugar
  • 50 g of butter
  • 100 ml of custard cream
  • 1 teaspoon of ground cinnamon
  • Raisins (optional)
  • Pine nuts (optional)
  • Powdered sugar for decorating

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel and finely slice the Annurche apples. Set aside.
  3. In a skillet, melt the butter and add the sliced apples, sugar, cinnamon, and grated orange zest. Cook over medium heat for about 10 minutes, until the apples start to caramelize slightly.
  4. Add the orange juice and, if you like, raisins and pine nuts. Mix well and cook for another 2-3 minutes, then remove from the heat and let it cool.
  5. Roll out the puff pastry or strudel dough on a lightly floured surface.
  6. Evenly spread the custard cream over the dough, leaving a free edge of about 2 cm along the margins.
  7. Place the mixture of Annurche apples and orange over the cream.
  8. Roll the dough with the filling inside, sealing the edges well. If you are using puff pastry, after rolling it cut off the excess and use pieces to decorate the surface, such as strips or leaves.
  9. Place the strudel on a baking tray lined with parchment paper and bake for about 30-40 minutes or until the dough is golden brown and crispy.
  10. Let it cool for a few minutes, then sprinkle with powdered sugar before serving.

Tips and Variations: If you wish for a richer flavor, you can spread some orange marmalade on one edge of the puff pastry before adding the cream and apples. Also, for a crunchy and nutritious touch, add chopped nuts along with the apples.
