Chickpea, Paprika and Sesame Seed Cream

Ingredients

  • 400 g of cooked chickpeas (you can use canned chickpeas for convenience)

Preparation

  1. If you are using canned chickpeas, drain them well and rinse under running water. If you prefer to use dry chickpeas, remember to soak them the night before and cook them until soft.
  2. In a blender or food processor, combine the chickpeas, peeled garlic, tahini, lemon juice, olive oil, paprika, salt, and pepper.
  3. Blend everything until you obtain a smooth and homogeneous cream. If necessary, add a little water or the cooking water of the chickpeas to achieve the desired consistency.
  4. Taste and adjust salt, pepper or paprika if necessary.
  5. Transfer the chickpea cream to a bowl and garnish with a drizzle of olive oil, a sprinkle of paprika and toasted sesame seeds.
