Broccoli Cream with Crispy Croutons

Ingredients

  • 500 g of broccoli
  • 1 medium potato
  • 1 white onion
  • 500 ml of vegetable stock (or water)
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Croutons or stale bread

Preparation

  1. Start by cleaning the broccoli: remove the stem and separate the florets. Rinse well under cold running water.
  2. Peel the potato and cut it into cubes.
  3. Peel and finely slice the onion.
  4. In a large pot, heat the extra virgin olive oil and sauté the onion until it becomes translucent.
  5. Add the broccoli and potatoes to the pot and cook for a couple of minutes, stirring occasionally.
  6. Pour in the vegetable stock until the ingredients are covered, bring to a boil, and then lower the heat. Simmer for about 20 minutes or until the broccoli and potatoes are soft.
  7. Once the broccoli and potatoes are cooked, use an immersion blender to blend everything into a smooth and homogeneous cream. Adjust salt and pepper to your taste.
  8. For the croutons, cut the stale bread into cubes and toast them in a pan with a drizzle of oil until they are golden and crispy. You can also season with a pinch of salt and aromatic herbs if you prefer.

Serve the broccoli cream hot with the crispy croutons scattered on top.
