- 4 eggs
- 120 g of sugar
- 120 g of flour
- 1 pinch of salt

- 500 ml of milk
- 4 egg yolks
- 100 g of sugar
- 40 g of flour or cornstarch
- 1 vanilla bean or vanilla extract

- 200 ml of fresh cream
- 200 g of dark chocolate

- Fresh strawberries (quantity to taste)
- Icing sugar (optional)

Start with the sponge cake base. Whip the eggs with the sugar until you get a fluffy and light mixture. Gently fold in the sifted flour and a pinch of salt. Pour the mixture into a buttered and floured cake tin and bake in a preheated oven at 180 °C for about 20-25 minutes. Once baked, allow it to cool.

For the custard cream, heat the milk with the vanilla until it almost comes to a boil. Separately, beat the egg yolks with the sugar until they become frothy, then add the sifted flour and mix well. Slowly pour in the hot milk, stirring continuously, then return everything to low heat and cook until the cream thickens. Allow to cool, covering with cling film to prevent a skin from forming.

For the ganache, break the chocolate into a bowl. Bring the cream to a boil and pour it over the chocolate. Let it rest for a minute and then stir until you get a smooth cream. Cool the ganache until it reaches a spreadable consistency.

Once all the elements are cool, cut the sponge cake horizontally to create two layers. Spread a layer of custard cream on the lower layer, then overlap the second sponge cake disk.
