Whipped cream and coffee muffins

Whipped cream and coffee muffins are a delicious combination of the sweetness of whipped cream and the intensity of the coffee. They are perfect for breakfast or an energetic snack. Here is the recipe:

Ingredients

  • 250g of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • 2 eggs
  • 100g of sugar
  • 100ml of vegetable oil
  • 125ml of fresh cream
  • 80ml of cold espresso coffee
  • 1 teaspoon of vanilla extract (optional)

Preparation

  1. Preheat the oven to 180°C and prepare a muffin tin by lining it with paper cupcake liners.
  2. In a bowl, sift and mix together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  4. Add the vegetable oil, cream, cold coffee, and vanilla extract, continuing to mix until the mixture is homogeneous.
  5. Combine the dry ingredients with the wet ones, mixing as little as possible: the batter should be combined but not overworked.
  6. Fill the cupcake liners up to 2/3 of their capacity with the batter.
  7. Bake the muffins for about 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  8. Let the muffins cool on a wire rack before serving them.

If you want to add an Italian touch, you could sprinkle the muffins with a little powdered sugar mixed with coffee powder to intensify the flavor.
