Couscous with Curry and Shrimp
17/11/2023Couscous with curry and shrimp is a dish with an exotic aroma and intense flavors that bring together the tradition of the Maghreb with the spicy touches of India. Here’s the recipe with an Italian twist, perhaps through the use of fresh Mediterranean ingredients like freshly caught shrimp and aromatic herbs from our region.
Ingredients
- 200 g of couscous
- 250 g of peeled shrimp
- 1 onion
- 2 cloves of garlic
- 1 red pepper
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of curry powder
- A pinch of chili pepper (optional)
- Salt and pepper to taste
- A handful of fresh parsley (or cilantro if you prefer)
- 400 ml of hot vegetable or fish broth
- 1 lemon (the juice)
Preparation

Start by preparing the couscous. In a large bowl, pour the couscous and add a drizzle of oil and a pinch of salt. Heat the broth and when it’s hot, pour it over the couscous until it’s covered by a couple of centimeters. Cover with a lid or a kitchen towel and let it rest for about 5 minutes or until all the broth has been absorbed.

In the meantime, prepare the dressing. Finely chop the onion and garlic and cut the pepper into cubes.

Heat the oil in a large skillet and sauté the onion and garlic until translucent.

Add the pepper and cook for a few minutes until slightly soft.

At this point, add the peeled shrimp, curry, chili pepper (if using), salt, and pepper. Cook for 3-4 minutes until the shrimp have turned pink and are cooked through.

Fluff the couscous with a fork and, if it has cooled too much, you can briefly reheat it in the microwave or in a pan with a drizzle of oil.

Add the couscous to the skillet with the shrimp and vegetables, and mix well.

Remove from heat and season with lemon juice and chopped fresh parsley (or cilantro).

Serve your couscous with curry and shrimp immediately, while still hot.

Couscous is a preparation made from durum wheat semolina typical of North Africa, very versatile and quick to cook. With the addition of curry, it becomes a dish full of flavor, while the shrimp add a touch of the sea that blends wonderfully with the sweet and spicy seasoning of the curry.
