Couscous Pancakes

Couscous pancakes are an unusual and creative variant of traditional pancakes. Here’s a basic recipe that can be customized with additions to taste, such as fresh or dried fruit:

Ingredients

  • 1 cup of cooked and cooled couscous
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup of flour (you can use whole wheat flour or another flour of your choice)
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 1 teaspoon of sugar (optional)
  • Butter or oil for greasing the pan

Preparation

  1. In a medium bowl, beat the eggs with the milk.
  2. Add the cooked couscous to the egg and milk mixture and mix well.
  3. In another bowl, combine the flour, baking powder, salt, and sugar (if using).
  4. Add the dry ingredients to the couscous and egg mixture and stir until you have a smooth batter.
  5. Heat a non-stick pan over medium heat and, once hot, lightly grease with butter or oil.
  6. Pour a small amount of batter into the hot pan and cook until bubbles begin to form on the surface of the pancake and the edges look set.
  7. Flip the pancake with a spatula and cook the other side until golden brown.
  8. Repeat with the rest of the batter, greasing the pan as needed.
  9. Serve the pancakes hot with your favorite accompaniment, such as maple syrup, honey, jam, yogurt, or fresh fruit.

Fun Facts

Pancakes are known in many cultures by different names and variations: in France as crepes, in Russia as blinis, and so on. By using couscous, we transport this preparation into a Mediterranean dimension, with a nod to North Africa, the homeland of couscous itself. This recipe represents a fine example of culinary fusion between different traditions.
