Couscous with Dried Fruit and Honey

  • 300 ml of water
  • 1 pinch of salt
  • 2 tablespoons of chestnut or acacia honey
  • 50 g of almonds
  • 50 g of walnuts
  • 50 g of raisins
  • Zest of 1 untreated orange
  • 1 teaspoon of cinnamon powder
  • 2 tablespoons of extra virgin olive oil

Preparation

  1. Begin by bringing the 300 ml of water to a boil with a pinch of salt.
  2. Pour the couscous into a large bowl and add the boiling water. Cover with a lid or a cloth and let it rest for about 5 minutes, or until the water is completely absorbed.
  3. In the meantime, toast the almonds and walnuts in a non-stick pan, without adding oil, until they become aromatic and slightly golden. Let them cool and then chop them coarsely.
  4. Fluff the couscous with a fork to separate the grains and stir in the extra virgin olive oil.
  5. Add the chopped dried fruit, the raisins (which you will have previously soaked in hot water and squeezed out), the grated orange zest, and the cinnamon. Mix everything with the couscous.
  6. Drizzle with the honey and mix well to evenly distribute the sweetness.
