Zucchini Schiacciatina

Here is a simple and tasty recipe to prepare zucchini schiacciatina.

Ingredients

  • 2 medium zucchinis
  • 200 g of flour
  • 1/2 packet of baking powder for savory cakes
  • 50 ml of extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Aromatic herbs as desired (such as rosemary, thyme, or mint)
  • 50 g of grated Parmesan cheese (optional)

Preparation

  1. Start by washing the zucchinis and grating them with a large holed grater.
  2. Place the grated zucchini in a colander, sprinkle with a little salt and let rest for about 10 minutes to lose the excess water.
  3. In the meantime, in a large bowl, mix the flour with the baking powder for savory cakes.
  4. Squeeze the zucchini well to remove water and add them to the bowl with the flour.
  5. Add the olive oil, a pinch of pepper, and finely chopped aromatic herbs.
  6. Mix everything with a fork or with your hands until you have a homogeneous dough. If you wish, you can also add grated Parmesan cheese to the dough for more flavor.
  7. Prepare a baking sheet lined with parchment paper and with your hands form small flat schiacciatine with the dough.
  8. Preheat the oven to 180 °C and, once hot, bake the schiacciatine for about 20 minutes or until they are golden brown and crunchy.
