Zucchini Fritters

Zucchini fritters are a simple and tasty dish that can be served as an appetizer or a side dish. Here is the classic Italian recipe with a touch from Il Cucinologo.

Ingredients

  • 2 medium zucchinis
  • 2 eggs
  • 100 g of all-purpose flour
  • 50 g of grated Parmesan cheese
  • 1 clove of garlic (optional)
  • A sprig of chopped parsley (optional)
  • Salt and pepper to taste
  • Oil for frying

Preparation

  1. Wash and grate the zucchinis with a coarse grater. Put them in a colander, salt lightly and let them lose the excess water for about 15 minutes, then squeeze them to remove the remaining water.
  2. In a large bowl, beat the eggs, then add the Parmesan, chopped parsley, and if you like a touch of garlic, you can incorporate a clove of pressed garlic. Mix well.
  3. Combine the grated zucchini with the egg mixture and mix well.
  4. Gradually add the flour, continuing to stir to avoid forming lumps. Make sure to obtain a smooth mixture. Season with salt and pepper to your taste.
  5. Heat a generous amount of frying oil in a pan. When the oil is hot, use two spoons to scoop portions of the batter and slide them into the hot oil. Fry the fritters until they are golden and crispy on both sides.
  6. Once cooked, remove the fritters from the oil and place them on paper towels to remove the excess oil.
  7. Serve the zucchini fritters hot or at room temperature.
