Zucchini Flan

The zucchini flan is a light and tasty dish, perfect as an appetizer or as a side. Here is the recipe for an Italian-style zucchini flan.

Ingredients

  • 600 g of zucchini
  • 3 eggs
  • 100 g of grated cheese (such as Parmesan or Pecorino)
  • 200 ml of cooking cream or milk
  • 2 tablespoons of breadcrumbs
  • Butter to taste for greasing
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Aromatic herbs (such as thyme or mint), chopped to taste (optional)

Preparation

  1. Wash and slice the zucchini into thin rounds. In a non-stick pan, cook the zucchini with a drizzle of oil until they are soft. Season with salt and pepper to taste.
  2. In a bowl, beat the eggs with salt, pepper, and a pinch of nutmeg. Add the grated cheese and continue stirring until you have a smooth mixture.
  3. Add the now lukewarm zucchini to the egg mixture, then add the cream or milk and, if you wish, the chopped aromatic herbs.
  4. Grease a flan tin, preferably one for flan, with butter and sprinkle the bottom and sides with breadcrumbs.
  5. Pour the mixture into the prepared tin and level it with a spoon.
  6. Bake in a preheated oven at 180 °C for about 40 minutes or until the flan is golden brown and the surface has puffed up slightly.
  7. Let the flan cool down for a few minutes before unmolding and serving.
