Zucchini and Cheese Fritters

Ingredients

  • 2 medium zucchinis
  • 100 g of grated cheese of your choice (for example, Parmesan, pecorino, or even a melting cheese if you prefer)
  • 2 eggs
  • 100 g of flour
  • A pinch of salt
  • Black pepper to taste
  • Oil for frying
  • (Optional) Fresh or dried aromatic herbs, like mint or basil

Preparation

  1. Start by washing the zucchinis and grating them with a large-holed grater. Put the grated zucchini in a colander, add a pinch of salt, and let it rest for about 10 minutes so it loses its water content.

  2. Meanwhile, in a large bowl, beat the eggs with a whisk, gradually adding the grated cheese, until a homogeneous mixture is obtained.

  3. Squeeze the zucchinis well to eliminate excess water and add them to the egg and cheese mixture.

  4. Incorporate the sifted flour, mixing well to avoid lumps.

  5. Season with black pepper to taste, and if you like, add the chopped aromatic herbs.

  6. Heat abundant oil in a frying pan and, when it’s hot, take portions of the mixture with a spoon and fry them until they become golden on both sides.

  7. Drain the fritters on paper towels to remove excess oil.

  8. Serve hot or at room temperature.
