Farmer's Eggs

Here is the recipe for making Farmer’s Eggs, a simple and rustic dish that relies on genuine ingredients:

Ingredients

  • 4 eggs
  • 1 small onion
  • 2 medium potatoes
  • 100 g of fresh or frozen peas
  • 4 ripe tomatoes (or a small can of peeled tomatoes)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of oregano or basil (optional)
  • Grated Parmesan cheese (optional)

Preparation

  1. Start by cleaning and cutting the onion and potatoes into cubes. If using fresh tomatoes, blanch them, peel and cut them into cubes, otherwise, you can use canned tomatoes.
  2. In a large pan, heat a drizzle of extra virgin olive oil and sauté the onion until it becomes translucent. Add the potatoes and let them brown until they begin to golden.
  3. Add the peas and tomatoes to the pan. If necessary, add a little water to prevent the sauce from sticking. Season with salt, pepper, and if you like, a pinch of oregano or basil to flavor. Cook for about 10-15 minutes until the vegetables are cooked, but still whole.
  4. When the vegetables are ready, make small wells with a spoon and crack an egg into each one. Cover the pan with a lid and let the eggs cook until they reach the desired doneness. Some like the yolk still runny, while others prefer it well-cooked.
  5. Once ready, serve the Farmer’s Eggs hot, sprinkling with grated Parmesan cheese if desired.
