Chicken alla campagnola
17/11/2023Country-style chicken is a rustic and tasty dish. As Il Cucinologo, I suggest an Italian variant of the classic country-style chicken, with Mediterranean ingredients that add a touch of sun and sea to the recipe. Here are the ingredients and procedure:
Ingredients
- 4 chicken thighs
- 2 bell peppers (red or yellow, for a touch of color)
- 2 medium potatoes
- 1 medium onion
- 2 cloves of garlic
- 4 ripe tomatoes or a can of peeled tomatoes
- Pitted black olives (optional)
- 1 sprig of fresh rosemary
- Extra virgin olive oil
- Salt and pepper to taste
- A glass of white wine
Preparation
- Begin by preheating the oven to 200 °C (392 °F).
- Wash and clean the vegetables: slice the onion, cut the bell peppers into strips, cube the potatoes, and crush the garlic cloves.
- In a large baking dish, pour a little extra virgin olive oil and arrange the chicken thighs together with all the vegetables except the tomatoes. Mix to blend the flavors and to ensure that everything is slightly coated in oil.
- Bake the dish in the oven and cook for about 15-20 minutes, until the chicken starts to brown.
- In the meantime, if you’re using ripe tomatoes, peel them after boiling and roughly chop them. If using canned tomatoes, they will already be ready to use.
- Remove the baking dish from the oven and add the tomatoes and olives to the mixture. Season with salt and pepper and add the rosemary.
- Pour the glass of white wine over the mixture and bake again.
- Cook for another 30-40 minutes, or until the chicken is well cooked and the vegetables are tender. If necessary, during cooking, turn the chicken thighs to ensure they brown evenly.
- Serve the country-style chicken hot, directly in its rustic dish or by transferring it to a serving plate.
